Buffalo Chicken Hoagie

Ingredients

  1. 3/4 cup hot sauce (I like Frank’s)
  2. 8 tablespoons (1 stick) unsalted butter
  3. 1 rotisserie chicken, skin discarded and meat shredded
  4. 1 rotisserie chicken, skin discarded and meat shredded
  5. One 2-foot Italian bread loaf, sliced in half lengthwise
  6. 1 stalk celery, thinly sliced
  7. 1 small head iceberg lettuce, shredded
  8. Blue Cheese Ranch, recipe follows
  9. 1 cup crumbled blue cheese
  10. 1/2 cup mayonnaise
  11. 1/4 cup sour cream
  12. 2 tablespoons minced chives
  13. 1 tablespoon vinegar
  14. 1 teaspoon onion powder
  15. 1 teaspoon garlic powder
  16. Salt and freshly ground black pepper

Instructions

  1. Put the hot sauce and butter in a small skillet and heat until melted and combined. Let cool slightly, then pour over the shredded chicken in a medium bowl and toss to coat completely.
  2. To assemble the sandwich, spread the chicken in an even layer on the bottom half of the bread. Top with the sliced celery and an ample amount of shredded lettuce. Spread the Blue Cheese Ranch on the top half of the bread and close the sandwich, using toothpicks to secure it. Cut into pieces and serve.
  3. Stir together the blue cheese, mayonnaise, sour cream, chives, vinegar, onion powder and garlic powder in a medium bowl until well incorporated. Season with salt and pepper.

Anyone have a suggestion of what type of cheese to use instead of blue cheese? My family is not fond of blue cheese. I thought feta but not sure

Made this for Super Bowl. Next time will get a ciabatta loaf, the Italian fell apart. Tastes good for a quick Buffalo chicken sandwich. Instead of rotisserie chicken, I already had boneless/skinless breasts and thighs, roasted them in the oven, then shredded and added Buffalo sauce until we were ready to build the sandwich, the flavor was good.

One of the best parts, the leftover ranch/bleu spread. I lightly spread it on steaks hot off the grill, or add it to a hot baked potato in place of sour cream, delicious!

I actually liked this more than I thought I would. In our family we are not fond of Hot Sauce. Adding the butter really mellowed it down and tasted really good. I purchased an inferior loaf of bread and this was the major flaw. Next time I will get a really fresh loaf of bread, not as dense as the one I bought, While the sandwich was a bit sloppy, that was the fun of it. Loved the crunch of the celery and lettuce. The blue cheese sauce was also tasty. But the best part was how easy and quick it was to make and it looked impressive.

I made this recipe mostly as posted (I used a crumbled Maytag blue cheese), and made it a second time with a few changes. First, I warmed the buffalo chicken. Then, I substituted thin-sliced TOASTED ciabatta bread in place of the Italian loaf. The toasted ciabatta bread added a nice crunch, it was easier to eat (!!), and the reduced volume of bread allowed the buffalo chicken and blue cheese to be the star of the show. LOVED it. Highly recommend.

I have made Katie’s blue cheese ranch dressing before. You do add blue cheese crumbles to her recipe. Use 1/2 cup blue cheese . Taste and if you like more blue cheese add more.
