Ingredients

  1. 4 ripe tomatoes, chopped
  2. 1/4 red onion, chopped
  3. 1 jalapeno, minced
  4. 8 cilantro sprigs, chopped
  5. 3 garlic cloves, minced
  6. Juice of 1 lime
  7. 1/4 cup olive oil
  8. 1/2 teaspoon salt

Instructions

  1. In a mixing bowl, combine all ingredients together. Toss thoroughly. Let stand 15 minutes before serving.

This salsa is THE BEST! We have made it for the past two generations in our family and now i’m proud to share it with my own children! Tip: We have found that the pith, or (white part) inside the Jalapeños is where a lot of the heat comes from aside from the seeds. So if you want a mild salsa, just remove the pith and the seeds.

I love this!! I used 1/2 of the olive oil, just because I personally don’t need that many calories in anything. I also added another jalapeno, but I think this is just because my jalapenos were weak this go round. I was very skeptical about the olive oil so waited to add it until last, but I loved it. It really does bring the flavors together and gives the salsa a better consistency.

We love the freshness and versatility of this recipe. We add items orleave items out as we have them. You can also adjust the heat to your level by adding more jalepenos. We like to leave the oil out for a healthier option since the tomatoes are fresh from the garden.

I used a half clove of garlic and half of a lime. Loved it and will make again. It was really runny but I like my salsa that way.

I agree with the other reviews, reduce the olive oil. I wish I would have read these before making the recipe. Mine had too much liquid, but it was very flavorful – just what I was looking for. I used it on beef & chicken tacos with a little sour cream and queso fresco last night and then as salsa with chips today.
