Mexican Avocado Salsa

Ingredients

  1. 2 ripe hass avocados
  2. 3 tomatillos, husked, rinsed and diced (about 1 cup)
  3. 1/4 cup chopped sweet onion
  4. 3 tablespoons chopped fresh cilantro
  5. 1 jalapeno pepper, finely chopped
  6. 2 tablespoons fresh lime juice
  7. Kosher salt and freshly ground pepper

Instructions

  1. Cut lengthwise around the middle of the avocados, then twist to separate the halves. Remove the pits by striking them with a knife blade, then scoop out the flesh with a spoon and dice.
  2. Combine the avocados, tomatillos, onion, cilantro, jalapeno, lime juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl and gently mix.

This is our most favorite salsa.  My son made this for the salsa contest in his Spanish class, and students voted the “most delicious”. 🙂  We LOVE the tartness, and it’s so addicting!!!

Wow, it was tart but then no one really eats salsa without anything so I started pulling things to eat it with – turkey and cheese, challah bread, whatever while the quesadillas were heating up. OMG – this was delicious with everything we ate it with! We might never go back to guacamole! The best thing we made all weekend. The tartness is great and makes it more interesting than the “plain” guacamole with red tomatoes.
