Ingredients
- 1 15-ounce can yellow corn, drained
- 1 15-ounce can white corn, drained
- 1 4-ounce can chopped green chiles, drained
- 1 2.5-ounce can sliced black olives, drained
- 4 scallions, finely chopped
- 2 tomatoes, finely chopped
- 2 jalapeno peppers, seeded and chopped
- 3 tablespoons white vinegar
- 1/3 cup olive oil
- Kosher salt
- 1 tablespoon finely chopped fresh cilantro
Instructions
- Mix the yellow and white corn, chiles, olives, scallions, tomatoes, jalapenos, vinegar, olive oil and 1/4 teaspoon salt in a medium bowl. Chill at least 1 hour.
- Just before serving, add the cilantro to the salsa.

This corn dip is the best. I used apple cider vinegar. I got fresh corn from our farmers market. The cilantro was just enough. I do like cilantro just not a lot of it. This dip tastes better after it chills in the fridge and gets better and better as it sits. I only put 1 jalapeño in there and removed the seeds. I omitted the mild chilies. The olives were a nice touch. This dip rocked my world.
A party fav! Fresh. Easy to make. I’ve made it and served it right away and its awesome too. I don’t put in as many jalapeños so the kids can eat it too – but this is a crowd pleaser. I’ve even served it as the side of grilled pork chops. My husband and kids love it – kinda that hot / cold mix and unexpected with pork but a great balance. This is my go – to recipe to take to events as it only gets better as it sits and stays fresh no matter where I take it.
Loving this recipe! It’s very good but we leave out the hot peppers. Not everything has to be hot these days.
Easy & delicious. I substituted the vinegar with fresh lime juice which made it perfect!
