Ingredients

  1. 1 heart of romaine lettuce, chopped
  2. ½ cup chopped cauliflower florets
  3. 1 small cucumber, chopped
  4. ¼ red bell pepper, chopped
  5. 1 small carrot, peeled and finely chopped
  6. 1 tablespoon minced celery stalk and leaves
  7. 2 green onions, minced
  8. 3 tablespoons sunflower seeds
  9. 1 tablespoon minced fresh parsley
  10. 2 tablespoons favorite homemade dressing
  11. salt and freshly ground black pepper to taste

Instructions

  1. Combine romaine lettuce, cauliflower, cucumber, bell pepper, carrot, celery, green onions, sunflower seeds, and parsley in a large bowl. Drizzle your favorite homemade dressing on top and season with salt and pepper.

Simple and straight forward just how a salad should be. It was also really colorful which is always pleasing to the eyes. I wanted to add some tang so I gave my cauliflower a quick pickle and that was the only change I made. The celery leaves add a lot of flavor so be sure and add them in.
