Watermelon Salad with Mint Dressing

This is a recipe that a cafeteria manager handed me. Confectioners sugar should be added for display.

Ingredients

  1. ½ small watermelon, cubed
  2. ½ cup chopped black olives
  3. ¼ cup crumbled feta cheese
  4. ½ red onion, sliced
  5. 2 tablespoons lime juice
  6. 4 leaves mint, thinly sliced, or more to taste
  7. salt and ground black pepper to taste
  8. ¼ cup olive oil

Instructions

  1. Combine watermelon, olives, feta cheese, and red onion in a bowl.
  2. Combine lime juice, mint, salt, and pepper in a small bowl. Whisk in olive oil until blended. Pour over watermelon mixture; stir until evenly coated. Chill until serving.

I prefer using kalamata olives and basil with balsamic vinegar. We don’t love the mint, but the vinegar with the basil and Kalamata is my new way and I get asked for the recipe each time I bring it to an summer potluck or dinner! I do the rest as suggested!

I barely use any oil in this. Also to take the sharpness out of the onion, I marinate the onions in some lime juice for an hour (while I’m cutting up everything else), then just pour them in with the rest. It softens them and takes the bite down a notch. The olives sound strange, but at least try it once with them in – it works!

This is refreshing and interesting salad. I loved the flavor that the lime juice and mint added. At first I wasn’t sure I’d like the onions and olives with watermelon, but they added a nice dimension to the flavor. I’ve already made it a second time. This recipe will surely be a go to favorite for me.

7.23.17 Thought 1/4 cup oil for two servings was a bit too much for us, so I did cut that back a little, otherwise, followed the recipe. This has a nice combo of ingredients with many layers of flavor: the sweetness of the melon, the saltiness of the olives and the feta, the tartness of the lime, the crunch of the red onions, and the zing of that fresh mint. Thanks for sharing.
