Ingredients
- 6 large sweet potatoes, peeled and diced
- 4 large baking potatoes, peeled and diced
- ½ cup mayonnaise
- ¼ cup Dijon mustard
- ⅓ cup balsamic vinegar
- 1 teaspoon ground turmeric
- 1 tablespoon chopped chives
- salt and ground black pepper to taste
- 2 slices crisply cooked bacon, crumbled
- 2 green onions, finely chopped
- 1 red onion, finely chopped
Instructions
- Place the diced sweet potatoes and potatoes in a Dutch oven, cover with water, and bring to a boil. Boil until the potatoes are fork tender, but not mushy, about 20 minutes. Drain and cool the cooked potatoes slightly.
- Meanwhile, mix together the mayonnaise, mustard, balsamic vinegar, turmeric, chives, salt and pepper in a large bowl. Add the bacon, green onions, red onion and cooked potatoes and toss to coat. Serve garnished with extra chives or green onion.

I followed this recipe exactly except I added 4 slices of crumbled bacon instead of 2. Served it to 10 people at a Father’s Day luncheon. NO ONE liked it. At best the other guests agreed with me that it was bland. At worst they left it on their plates. The next day I was able to improve it a bit by adding Craisins and some sliced almonds.
I followed this recipe fairly closely (unusual for me) and it was a big hit with the whole family! I’ve served it warm sometimes and other times I made it a day in advance to give the flavors a chance to blend even better. I’ve made several of the potato salad recipes that I found on this site and this is our family’s favorite. If you avoid recipes that only have a few reviews, my advice is to try this one anyway!
This was delicious. I made exactly as stated, but halved the recipe as there is only two of us, even so , we had leftovers. Which brings me to my next point, it was great right out of the refrigerator. I was concerned after storing the onions would overpower, but they did not!
The flavors in this recipe are 5 stars! The turmeric, balsamic vinegar, and bacon along bring a variety of flavors to the potatoes! I did cut back the red onions down to a few tablespoons, but otherwise I followed it as written! Enjoy!
This recipe had me worried once I started actually making them, it seemed a little over the top with taste but it was delicious!! Over cooked the potatoes a little but it was still really good!
This was very good. I served it the next day out of the frig. and it was good that way also, although I think it would have been better warm. The only change that I made was I added at little bit of sugar.

I had to leave out the red onion because I didn’t have any, but followed the recipe other than that. It was good warm, but it was great cold! The flavors really had time to meld, and I don’t think that it needed the red onions after all, it was “oniony” enough. Next time I make this I’m going to try it with just the sweet potatoes ,yummy!
Very good! I decreased the recipe to 6 servings, but increased the bacon to 4 slices. I actually enjoyed this more cold than I did warm, but either way is good. Thanks for the recipe!

Delicious. I halved the recipe but not the amt. of bacon. I would even add a bit more. Also, I would use medium sweet potatoes rather than lg. as well as med. white potatoes. I would definitely make it again.
