A wonderful red wine vinegar and mayonnaise sauce is drizzled over chopped broccoli, crumbled vegetable bacon, copious amounts of grated cheese, and red onion.

Ingredients

  1. 8 vegetarian bacon strips
  2. 1 head fresh broccoli, chopped
  3. 1 small head cauliflower, chopped
  4. 1 ½ cups shredded sharp Cheddar cheese
  5. ½ large red onion, chopped
  6. ⅓ cup light mayonnaise
  7. ⅓ cup plain yogurt
  8. ¼ cup red wine vinegar
  9. 2 tablespoons white sugar
  10. 2 teaspoons ground black pepper
  11. 1 teaspoon salt
  12. 1 teaspoon fresh lemon juice

Instructions

  1. Cook bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain fat and crumble bacon.
  2. Mix broccoli, cauliflower, Cheddar cheese, onion, and crumbled bacon together in a large bowl.
  3. Whisk mayonnaise, yogurt, red wine vinegar, sugar, ground black pepper, salt, and lemon juice in a bowl until thick and creamy. Pour dressing over broccoli mixture and toss to combine. Cover and refrigerate until serving.

Delicious! I cut the sugar in half and I used a scant quarter teaspoon of salt. I used Morningstar Farms veggie bacon, and there was plenty of salty flavor.

This was so good. Did not have cauliflower so I used what I had in the house. Celery,avocado, cranraisins,slivered almonds, red pepper, and of course the broccoli, purple onion and the delicious dressing. I think you can add anything and it will be delicious. My guests loved it.

Great for a picnic! I used a food processor to shred my cheese and chop my veggies for a super quick prep. Subbed simulated bacon bits to taste (lots!) and low fat sour cream for the yogurt. Delish!

This is AWESOME! I followed the recipe except I used real bacon and I also subbed sour cream for plain yogurt. So wonderfully yummy! Will definitely be making this one again.

I followed the recipe exact, only using REAL bacon bits because I don’t ordinarily keep vegetarian bacon on hand and omitting the sugar because we don’t care for sweet salads. This is one of the best broccoli salads we have had in a long time. I especially loved the combination of broccoli and cauliflower and there was just enough of everything (bacon, cheese, dressing) without being overwhelming. GREAT salad!
