Vegan Raw Sunchoke Salad with Apples

In addition to increasing the protein level of conventional oatmeal, adding an egg also results in a dish that is incredibly thick and creamy. It only gets better when you add peanut butter, banana, and bacon.

Ingredients

  1. 1 ½ cups thinly sliced sunchokes
  2. 1 ¾ cups thinly sliced peeled apples
  3. ½ cup olive oil
  4. ¼ cup orange juice
  5. salt and freshly ground black pepper to taste
  6. 2 pinches white sugar

Instructions

  1. Arrange sliced sunchokes and apples on a serving platter.
  2. Combine olive oil, orange juice, salt, pepper, and sugar in a blender; blend until creamy. Drizzle over sunchoke-apple mixture.
