These are a delicious, light, low-calorie, low-carb substitute for a tuna wrap sandwich! In place of the tortilla in a classic wrap sandwich, try to use lettuce leaves that are larger and free of tears or holes. Even a small amount of cheese adds a lot of flavor.

Ingredients

  1. 1 (6 ounce) can chunk light tuna, drained
  2. 2 tablespoons chopped onion
  3. 1 tablespoon light mayonnaise
  4. salt and ground black pepper to taste
  5. 3 leaves green lettuce, rinsed and patted dry
  6. 2 tablespoons finely shredded low-fat Cheddar cheese (Optional)

Instructions

  1. Combine tuna, mayonnaise, onion, salt, and pepper in a bowl.
  2. Lay lettuce leaves out. Divide tuna mixture among the leaves, placing it in the middle of each leaf. Sprinkle Cheddar cheese over the tuna. Roll leaves up to create wraps.

Very basic tuna salad mix, but once combined with the lettuce and cheese, it works! I did find the tuna extremely dry (even with using oil-packed tuna), so I ended up using at least double the mayo called for. It was enough to stuff 2 romaine leaves, so whether it makes 3 servings is up to you. For me it made the perfect sized lunch.
