It’s simple to prepare this blackberry wine cake. In this dish, cake mix, blackberry wine, and gelatin are mixed together, then baked in a Bundt pan.

Prep Time: 10 mins
Total Time: 10 mins
Servings: 2
Yield: 2 servings

Ingredients

  1. 2 medium avocados
  2. 1 (5 ounce) can light tuna (such as Century®)
  3. 2 small tomatoes, chopped
  4. 1 tablespoon chopped fresh cilantro, or to taste
  5. ½ tablespoon ground black pepper
  6. 1 pinch chili powder, or more to taste
  7. salt to taste

Instructions

  1. Scoop out avocado contents and place in a bowl. Set aside shells.
  2. Mix in tuna, tomatoes, cilantro, pepper, chili powder, and salt. Divide mixture between shells to serve.
  3. My grandmother told me to always pick the pear-shaped avocados instead of the circle ones, because they have more contents.
  4. You can substitute parsley for cilantro.

Fast, easy and really delicious! I’ve had it on toast (which is good on both multigrain and honey wheat) but I liked it best in a lettuce wrap. Next I’m going to try it with spinach and a spring wrap.

I didn’t find it terribly flavorful. I added some radish for crunch and also some green onions. I don’t think I’ll make it again.

Very easy and tasty. Felt healthy eating this.

I really enjoyed this and I’m not the biggest fan of tuna! I did use a little less tomato than called for, personal preference. The recipe didn’t say whether to cube or mash the avocado, so I diced half of it, and lightly mashed the rest. The seasonings were perfect. I will definitely make this again.
