There is nothing better than a tomato and mozzarella salad with fresh basil and a drizzle of olive oil! Especially during the summer when you can pick tomatoes and basil from your garden, this is the ideal salad substitute.

Ingredients

  1. 3 large tomatoes, sliced
  2. 8 ounces mozzarella cheese, sliced
  3. ¼ cup olive oil
  4. ¼ cup balsamic vinegar
  5. ¼ teaspoon salt
  6. ⅛ teaspoon ground black pepper
  7. ¼ cup minced fresh basil

Instructions

  1. Gather all ingredients.

I have been making this for years! Can’t wait every summer for fresh locally grown tomatoes. This salad is the best! This recipe neglects to specify that it’s FRESH mozzarella that is the ingredient. The picture shows it, but if you have never made it, you might not know.

Excellent recipe.. so easy. I circled a large Platter with the home-grown sliced tomatoes, alternating with sliced mozzarella, and topping with basil. I modified it by filling the center of the platter with sliced avocados, and sprinkling the salad with slivered almonds and croutons. I lightly sprinkled an olive oli and a garlic dressing over the Platter. It was so delicious. My guests devoured it.

I used my home brewed apple cider vinegar, in place of balsamic which can be overpowering. Black Krim tomatoes from the garden also help with their big flavor.

I regularly use this recipe with some additions . I double the dressing and add a clove of garlic and some fresh basil and blend with my immersion blender then serve it all over greens of your choice and add some garden cucumbers and peppers chopped small for a little extra pizzazz!! Presents beautifully and never disappoints!!

Next time I will cut the olive oil, balsamic, salt and pepper in half. The full recipe leaves a runny mess on the bottom of the serving plate.
