Ingredients
- 1 cup halved grape tomatoes
- 1 cup diced cucumber
- ½ cup chopped green onions
- ½ cup chopped fresh cilantro
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh mint
- salt and ground black pepper to taste
Instructions
- Mix grape tomatoes, cucumber, green onions, cilantro, lemon juice, mint, salt, and pepper together in a large bowl.

It was okay. I didn’t find it particularly noteworthy, but I made it to use up some cilantro. I used the dish itself as a healthy add-on to sandwiches.
This is delicious. I added a little extra lemon juice and olive oil. The mint adds a really unique twist, but it is still tangy. Usually I have to let these salads sit for a few hours before i like the flavor, this one i could eat instantly. Would definitely make again.
Delightful, fresh taste. I used lime juice and a touch of flavored olive oil. Definitely needs salt. Great late summer dish when the veggies are plentiful.

8-17-20 We had this with some tikka masala from a meal kit. It does make a nice compliment. My husband enjoyed it, but I thought we could cut back on the leaves a bit.
It was amazing. I had to use parsley instead of cilantro and added some garlic chives. It was even better the next day.
Delish! I added a bit more cilantro and fresh squeezed lemon, did not add salt or pepper. This will be a perfect healthy side for the grill out we are doing later today.

Made the recipe as listed except I had to use less cilantro since i was running low and not going shopping! It is quite delicious, i served it with plain yogurt and tofu tikka masala. The second time i added the olive oil someone else mentioned in comments, which was also delicious.
I made this for a work lunch for 40 people. Our department made Indian dishes for the group. This salads freshness perfectly complimented the meal and everybody raved about it. This is a definite keeper!!
This is one of my go to Salads! I do like to add in some olive oil too, it just adds to the goodness.

I used red onion and added some celery heart, and lemon pepper. I used 1/4 cup fresh chocolate mint and no cilantro. We had this with some grilled chicken marinated in yogurt and lemon. This was a good complement to the chicken.
This was good the day I made it, but awesome the next day. Very refreshing! I didn’t have any cilantro, but didn’t really miss it.
1.1.17 I’m sure this would be delicious served over curry, but I served it over grilled haddock which was sensational. The combination of cilantro and fresh mint bring a very pleasant, surprising flavor.
