Ingredients

  1. 2 large cucumbers – halved lengthwise, seeded and sliced
  2. ⅓ cup red wine vinegar
  3. 1 tablespoon white sugar
  4. 1 teaspoon salt
  5. 3 large tomatoes, seeded and coarsely chopped
  6. ⅔ cup coarsely chopped red onion
  7. ½ cup chopped fresh mint leaves
  8. 3 tablespoons olive oil
  9. salt and pepper to taste

Instructions

  1. In a large bowl, toss together the cucumbers, vinegar, sugar and salt. Let stand at room temperature for an hour, stirring occasionally.
  2. Add tomatoes, onion, mint and oil to cucumbers and toss to blend. Season to taste with salt and pepper.

I liked the touch of Mint and I prefer using firm Roma tomatoes with the seeds and pulp left in that adds to the juicing process.

Did not make any changes, but as other reviews have noted quite a bit of water in the finished salad. I will dump the sugar/salt water next time I make it. Otherwise, a real favorite!

The adults loved this more than the kids, but we really lived it. This is just a great, simple summer salad. Easy to put components together while you have a little time between doing other things, and then it’s easy to toss it all in the final bowl just before serving. I had smaller cucumbers than I’d like so I adjusted everything

I made this last night and it was wonderful. Had company over and they wanted the recipe. I made it according to recipe except I added garlic to it minced. I have a garden with lemon cucumbers and regular cucumbers and tomatoes, so I will be making it a lot. It taste great with Mint.

I made the marinade and added the onions and English cucumbers a couple of hours early to let them marinade. I was going to add the tomatoes at the end but I didn’t. This dish was delightful. My husband that hates onions ate it. So fresh and summery…. i encourage you to use English cucumbers that have less water, seeds and pulp. Very nice

Excellent salad! I recently purchased a small mint plant, and it came in handy here. I’ve never used mint in cooking before, and it really complements this salad. If I was going to bring this for a group (and I’m thinking of doing that because it came out so good), I’d further slice the cucumber into quarters, not just halving it. Nice for the warmer weather when you don’t want to deal with mayo. Very light and delicious, too!

Been making this salad since I was …. well my mom made this salad when I was a child in the 60’s It is timeless. I do modify this recipe occasionally by omitting the sugar and adding watermelon as the sweet component. Tossed in at the end and served

I did make changes. I went to a half cup red wine vinegar, 2 tbl of sugar, 1/4 cup olive oil, 3 cucumbers. Makes 8 servings that each are 90.6 calories. I use these for my daily snacks between walks and meals.

This was delicious and I don’t often say that about salad! I did make 2 changes..didn’t have red wine vinegar so I used Rice vinegar and second…I cut the onions down to half because my family does not like them. The kids still picked them out but I was ok with them!
