A few simple ingredients and an immersion blender are all you need to make creamy homemade mayonnaise. I won’t ever purchase store-bought again after discovering how quick and much great it tastes!

Ingredients

  1. 1 teaspoon Dijon mustard
  2. ¼ cup extra-virgin olive oil
  3. ½ cup balsamic vinegar
  4. 1 pinch ground black pepper
  5. 1 avocado – peeled, pitted and sliced
  6. 2 small tomatoes, each cut into 8 wedges

Instructions

  1. In a small bowl, whisk together the mustard, olive oil, balsamic vinegar and pepper. Arrange the slices of avocado and tomato alternately like the spokes of a wheel on one big serving plate, or individual plates. Drizzle lightly with the dressing, and serve immediately.

Made as written and not a fan. Tomato wedges and avocado slices are completely different thickness and do not “pinwheel” good. Especially if you get a ripened avocado that is at the perfect stage to eat. It mixed with the juices from the tomatoes turn it to mush. On that note, the amount of dressing is WAY too much. This has potential with some tweaks but I won’t be making it again. Sorry.

Yuck. I never post bad reviews and hardly ever dislike food but this was terrible. I was so looking forward to the yummy tomato avocado combo and I love olive oil and vinegar but the vinegar was too overwhelming and tasted bad with the avocado; the olive oil was also too overpowering. If I were to change it I’d use only one tablespoon vinegar, the rest lemon and barely any olive oil, a little salt and throw some onion in with a bit of garlic powder. I’d probably use a white vinegar l

So my thoughts are…it’s just ok. Dressing is good but didnt really like it much on avocados. I added some cucumber which was a good addition. I think I’ll use the leftover dressing on tomatoes, cucumber and red onion. oh, and like others said, I made 1/2 the amount and I still had plenty left.

Extremely easy and very tasty. Like many others have said, cut the dressing in half and it will be plenty. I will make this again, but will cut down on the balsamic slightly.

This salad was very easy and fast but the dressing is off. I was on the fence between 3 & 4 stars because of the dressing. The vinegar to oil ratio is off especially if you use a good quality balsamic. I recommend using 1/2 c olive oil, 2 teaspoon good quality balsamic, 1 tablespoon Dijon, 1 clove garlic & salt/pepper to taste.

I decided to depart from the precise recipe, adding a bed of baby spinach. With the tomatoes and avocado added sliced red bell pepper, seedless cucumber, celery, and sliced boiled egg. Made a very tasty green salad better with the wonderful balsamic dressing.

Awesome salad! I didn’t have balsamic vinegar so I switch it w/ red wine vinegar and only 3 tablespoons. Added Italian seasoning , kosher salt and Cajun seasoning for a bit of kick.

This was perfect. I used the extra dressing on other salads. This was very simple healthy salad without any artificial sugar added. I am going to make this again and again.

Thanks for the recipe. I used yellow mustard and three large roma tomatoes. The recipe calls for what I feel is way too much dressing. I used 1 tbs oil and 3 tbs vinegar and it was perfect.

I’m a big fan of balsamic vinegar so this was for me. Only changes we made were to add a dash of salt, a bit of sliced white onion and sliced cucumber. Quick “salad” with healthy, yummy ingredients. Definitely will be using this recipe often.

Delicious. I made only 1/3 of the dressing (plenty) and cut down the vinegar. I added thin-sliced red onion and feta. mmm
