Ingredients

  1. 1 cup kasha (toasted buckwheat groats)
  2. 1 tablespoon olive oil
  3. 2 onions, peeled and chopped
  4. 1 clove garlic, minced, or to taste
  5. 1 cucumber, peeled and diced
  6. ¾ cup chopped fresh parsley
  7. 6 tablespoons chopped fresh mint
  8. 1 lemon, juiced
  9. 1 pinch dried mixed herbs

Instructions

  1. Rinse buckwheat groats. Bring a saucepan of water to a boil, sprinkle in the buckwheat groats, and simmer until buckwheat is tender, about 10 minutes. Drain and cool.
  2. Heat olive oil in a skillet over medium heat; cook and stir onions and garlic until onion is translucent, 5 to 8 minutes. Set aside to cool.
  3. Lightly toss cucumber, parsley, mint, lemon juice, and mixed herbs in a large salad bowl until thoroughly combined; stir in cooked buckwheat and onion mixture.

Thank you for this recipe! This was pretty tasty as written, but felt like it was a little monotone, which may have been in my choice of dried herbs. I didn’t include any heat which is probably what it needs. Maybe whisking some olive oil, the herbs with heat, then mixing would get some more flavor throughout. When I made it I split a dozen or so cherry tomatoes and added them, which added something. Also, toasted walnuts wouldnt be bad for some crunch. Maybe sweet and hot walnuts? Anyhow, really appreciate the recipe! It was good!

This is a refreshing dish that only those who are sensitive to gluten will care that it is gluten free. I added some fresh hot peppers to spice it up. Leave it to sit for an hour or so to help the flavours get acquainted. Thank you for the recipe.
