I wish I could give this more than five stars, because its absolutely outstanding! The perfect meal for a warm summer lunch. The flavors are complex, yet the meal is simple. There is a little sweetness, but its not sweet. There is a little spice, but its not spicy. This an all-around fabulous meal and I can’t wait to have the leftovers because I think it will be phenomenal cold too!
Delicious salad. Lots of chopping and peeling, so be sure to do all prep beforehand. I thought it needed a little salt and could have used some crunch, but it was delicious and easily adjusted.
