Tangy Spinach Salad

Ingredients

  1. ½ onion, chopped
  2. ⅓ cup white sugar
  3. ¼ cup apple cider vinegar
  4. ¼ cup canola oil
  5. 1 ½ tablespoons prepared yellow mustard
  6. ½ teaspoon salt
  7. ½ teaspoon celery seed
  8. ¼ teaspoon ground black pepper
  9. 1 (9 ounce) bag fresh spinach, chopped
  10. ⅔ cup herb-seasoned stuffing mix (such as Pepperidge Farm® Cubed Herb Seasoned Stuffing)
  11. 3 hard-boiled eggs, crumbled
  12. ⅓ cup crumbled cooked bacon

Instructions

  1. Whisk onion, sugar, apple cider vinegar, canola oil, yellow mustard, salt, celery seed, and black pepper together in a bowl until well combined. Chill in refrigerator at least 2 hours to blend flavors.
  2. Mix spinach, stuffing mix, eggs, and bacon together in a large bowl. Add dressing and stir to coat.

I made some minor changes to the recipe: used Dijon mustard instead of yellow, substituted mushrooms for the packaged dressing and cut the sugar down to 1/2 teaspoon. It turned out awesome, with fresh spinach from my garden!

Couldn’t find spinach at the last minute, so I substituted mixed spinach and lettuce. Didn’t seem to make any difference, people LOVED it. It was excellent and I followed the original recipe for the dressing. I really don’t like yellow mustard, but decided to go ahead with it because of the tang. So glad I did, it wasn’t too mustardy at all. The only thing I changed was cooking the onions in with the bacon. I will definitely make this again!

Excellent Salad. I did not have any stuffing so I added some slivered almonds and tomatoes. Also did cut the sugar in half. This is a keeper.

Made as written with one exception and that is that I only used 1/4 cup of sugar instead of 1/3 cup. I only made the change due to personal preference. From past experience I’ve learned that we like equal ratio of sugar and vinegar. This was excellent! If you are like us and there is only two of you, keep your dressing separate an add it to your individual servings to keep the spinach from wilting. This one is a keeper!
