Tangy Cucumber Slaw for Tacos

A modified family recipe was used to create this luscious and simple pie. Apples or peaches can be used to make it.

Ingredients

  1. ½ head cabbage, chopped
  2. 1 cucumber, chopped
  3. ¼ red onion, chopped
  4. 3 tablespoons chopped cilantro, or to taste
  5. 9 tablespoons red wine vinegar
  6. 3 tablespoons olive oil
  7. 2 tablespoons brown sugar
  8. 3 cloves garlic, minced
  9. salt and ground black pepper to taste

Instructions

  1. Place cabbage, cucumber, red onion, and cilantro in a bowl to make coleslaw mix.
  2. Whisk vinegar, oil, sugar, garlic, salt, and pepper together in a separate bowl. Add dressing to the coleslaw mix. Let sit until flavors settle, at least 1 hour.
  3. White sugar can be used in place of brown sugar.

Perfect as written! Most vinegar based slaws call for way too much sugar but this was spot on. Excellent in tacos or on its own. 5 stars all the way!
