This busy diva doesn’t have time for a time-consuming side dish, so these mashed sweet potatoes and pears come from my kitchen. Sweet potatoes may never again be prepared in a different way by me.

Ingredients

  1. ½ head red cabbage, sliced
  2. 1 onion, thinly sliced
  3. 1 apple, peeled and grated
  4. ½ lemon, juiced
  5. 1 tablespoon vegetable oil
  6. 1 pinch white sugar
  7. salt and ground black pepper to taste

Instructions

  1. Bring 1 quart water to a boil in a large pot; add cabbage and cook until softened, 2 to 4 minutes. Drain.
  2. Mix cabbage, onion, apple, lemon juice, and oil. Season with sugar, salt, and pepper.
  3. You don’t have to boil the cabbage if you prefer it raw.

I chose to barely boil the cabbage, just to soften slightly. Followed the recipe and thought the finished product needed a bit more flavor so added 1T cider vinegar. I may add caraway seeds.
