Ingredients
- 2 red apples, diced
- 2 yellow apples, diced
- 1 tablespoon lemon juice, or more to taste
- 1 (3 ounce) package Neufchatel cheese, softened
- ¾ cup whipped cream
- ¼ cup brown sugar
- ¼ cup mayonnaise (Optional)
- 1 teaspoon vanilla extract
- 2 cups seedless green grapes, halved
- 3 stalks celery, thinly sliced
- 1 ½ cups walnut halves
- 1 cup sweetened dried cranberries (such as Craisins®)
Instructions
- Toss diced apples with lemon juice in a salad bowl.
- Beat Neufchatel cheese, whipped cream, brown sugar, mayonnaise, and vanilla extract together in a separate bowl until dressing is smooth and creamy.
- Stir grapes and celery into apples and toss lightly with dressing to coat. Top salad with walnut halves and sweetened dried cranberries.

I did make a few changes. I eliminated the mayo. I dislike it and, I typically don’t eat Waldorf salad because of the mayo. I only used Winesap apples, a tart red/green apple, for the sweet/tart contrast. I used black grapes and doubled the cranberries (mixed in) for the color. I loved the salad. The leftovers were my lunch for 2 days after our Thanksgiving dinner.
Loved this recipe (and my husband did too!). The only thing I changed was pecans for walnuts ~only because I did not have any walnuts on hand; I’m sure the walnuts would of worked great too… Thx for sharing
