Summer Salad with Burrata, Tomatoes, and Nectarines

Everyone enjoyed the salad I served for a potluck the other day since it was so wonderful. Nectarines can be substituted with peaches. For more taste, go for ripe heirloom tomatoes.

Ingredients

  1. 3 nectarines, pitted and chopped
  2. 2 large heirloom tomatoes, chopped
  3. 2 (4 ounce) balls Burrata cheese, cut into 3/4-inch pieces
  4. 2 tablespoons fresh basil, chopped, or to taste
  5. 5 tablespoons extra-virgin olive oil
  6. 3 tablespoons white wine vinegar
  7. 1 teaspoon Dijon mustard
  8. ½ teaspoon honey
  9. salt and freshly ground black pepper to taste

Instructions

  1. Combine nectarines, tomatoes, burrata cheese, and basil in a bowl.
  2. Stir together olive oil, vinegar, mustard, and honey. Season with salt and pepper. Drizzle dressing over salad.

I suggest reducing the white wine vinegar otherwise it’s too bitey. It overwhelms all the other wonderful flavors. Also, my nectarines seemed under ripe. They were very tough and lacked sweetness. I will definitely make this again regularly, but will use peaches instead.
