Everyone enjoyed the salad I served for a potluck the other day since it was so wonderful. Nectarines can be substituted with peaches. For more taste, go for ripe heirloom tomatoes.

Ingredients
- 3 nectarines, pitted and chopped
- 2 large heirloom tomatoes, chopped
- 2 (4 ounce) balls Burrata cheese, cut into 3/4-inch pieces
- 2 tablespoons fresh basil, chopped, or to taste
- 5 tablespoons extra-virgin olive oil
- 3 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon honey
- salt and freshly ground black pepper to taste
Instructions
- Combine nectarines, tomatoes, burrata cheese, and basil in a bowl.
- Stir together olive oil, vinegar, mustard, and honey. Season with salt and pepper. Drizzle dressing over salad.

Reviews
I suggest reducing the white wine vinegar otherwise it’s too bitey. It overwhelms all the other wonderful flavors. Also, my nectarines seemed under ripe. They were very tough and lacked sweetness. I will definitely make this again regularly, but will use peaches instead.
