Ingredients
- 6 ears corn, husked and cleaned
- 3 large tomatoes, diced
- 1 large onion, diced
- ¼ cup chopped fresh basil
- ¼ cup olive oil
- 2 tablespoons white vinegar
- salt and pepper to taste
Instructions
- Bring a large pot of lightly salted water to a boil. Cook corn in boiling water for 7 to 10 minutes, or until desired tenderness. Drain, cool, and cut kernels off the cob with a sharp knife.
- Toss corn, tomatoes, onion, basil, oil, vinegar, salt, and pepper in a large bowl; chill until serving.

Great summer salad. We added black beans, orange bell pepper, avocado and fresh mozzarella pearls and used Good Seasons Italian dressing.
Love this salad!! I keep making it year after year. Made it tonight and my brother & his family thought it was a 10. I use the ingredients but not the quantity or amounts; I adjust the white vinegar & olive oil to taste, using just a dash of salt and freshly ground black pepper. I use cherry tomatoes for better taste.
Love this salad/salsa. I find it easier to cut the scorn off the cob before cooking. I just steam it a bit in the microwave in a post or bowl with cover for 60 seconds for three ears. I also use balsamic and small amount of red onion. Making this and letting it sit for an horror more, will allow the acids to bread down the corm more. Love it!
I loved the combination of fresh vegetables, but fond the salad a little bland as a main dish. Next time, I will make it as a side and maybe add some additional vinegar and herbs to punch up the flavor.
Very good! I used balsamic vinegar since its what I had on hand. I loved the basil, but next time I think I’d use cilantro. This recipe had a little too much onion for my taste, but that’s just me. I liked it, but I only give five stars when my husband asks me to make it again, which he didn’t.
I love this salad. I’ve been making it for several years and will continue to do so. Sometimes I’ll switch it up and use red wine vinegar, but it’s delicious just as the recipe is.
This was so easy and a perfect side for BBQ ribs. I also took every shortcut mentioned by previous reviewers. Used a can of sweet corn (drained), one tomato, about a 1/4 cup of red onion and 2-3 tbsp of zesty Italian dressing. Besides being fast and tasty, it was yummy as a substitute for salsa over bean & cheese burritos the next day.
This is a great tasting summer side as written. To adjust for my family’s taste I now use halved cherry tomatoes, 1/2 a sweet onion, 1/3 cup vinegar, 1 tablespoon olive oil and 1 tsp pepper. No salt to keep it heart healthy. If I’m making a lot of sides for a large gathering I’ll use 1-1/2 bags of good quality frozen sweet corn because it cuts down prep time dramatically, though it’s not quite as fresh tasting. I’ll also swap cilantro for the basil if i’m serving with Mexican food or just want that taste.
Delicious side salad dish
I’ve been making this for years! It’s a great way to use up some of my garden produce. I like to add cucumber and use cilantro in place of basil also basil is good too! I like to get the salt and pepper corn from the local veggie stand when in season during the summer. Very colorful and tasty healthy salad! Thanks!!!

This has become my very favorite salad, and I just can’t keep it in the house! Everyone in my house has really enjoyed it! I didn’t read any of the other comments, but I used canned sweet corn – called “steam crisp” – and it was still beyond delicious!!! Thanks for sharing!
Maybe the vinegar is the secret?!? This was so good I could have eaten the entire bowl! Great during the summer with the fresh ingredients.
I want to like it, but I can’t. I’ve made this on two separate occasions, once with canned corn kernels and once with barbecued corn. Obviously it was better the second time, but it’s just too bland for me.

Loved this recipe! Was so light and refreshing tasting. I cut the corn off the cob and then cooked the corn that way instead of having to handle hot corn cobs to cut the corn off. And I used green onion instead of regular onion and then added crumbled feta cheese too. Delicious! I will definitely be making this again. Thank you so much for the recipe.
6.30.18 Corn and tomatoes are in season, so it’s time to take advantage of that! This salad is so fresh and so very easy, just delicious. Simple often is best, and that’s the case here. Very nice salad.
This is a great refreshing summer salad. My son is a confirmed tomato hater but, loves this and doesn’t balk at the tomatoes. I make it just as it is written with the exception of microwaving the corn.
