Strawberry Summer Salad

  4.7 – 35 reviews  • Spinach Salad Recipes

I made a pit stop and purchased a dinner that included this salad. I wasn’t even interested in trying the salad because it was so unique. I tried it and really liked it! I made my own copy at home. Everybody enjoys it! If you’d like, you can substitute any other type of greens for the spinach leaves or use them exclusively.

Prep Time: 20 mins
Total Time: 20 mins
Servings: 8
Yield: 8 servings

Ingredients

  1. 1 cup mayonnaise
  2. ¼ cup white sugar
  3. 1 tablespoon white vinegar
  4. 1 tablespoon poppy seeds
  5. 1 head iceberg lettuce, torn into bite-size pieces
  6. 1 bunch fresh spinach, washed, stems removed
  7. ½ cup diced red onion
  8. 1 (16 ounce) package fresh strawberries, hulled and sliced

Instructions

  1. Make a dressing by whisking together the mayonnaise, sugar, and vinegar in a small bowl. Stir in the poppy seeds; set aside.
  2. Toss together the lettuce, spinach, and onion in a large bowl. Drizzle the dressing over the salad and toss to coat. Add the strawberries and lightly toss again. Serve immediately.

This was very easy to make! The only change I would make next time is to make the dressing an hour or so ahead of time and then refrigerate before adding to the salad.

Awesome salad! Will make again!

Everyone in our familyloves this salad, made no changes at all. The one thing I will mention, it has to be eaten, no left overs because they get soggy, so don’t make more than your family can eat!

I made the recipe as written, and my dressing turned out more like a paste. It was so thick. I used Kraft brand mayo. Maybe the brand makes a difference. I ended up adding quite a bit of milk and additional vinegar to make it “pourable”. After that, it needed a little more sugar. With those changes, it was delicious.

Liked the combination of ingredients but since it was for Memorial Day, I added some blueberries, toasted walnuts and feta cheese. Thought the dressing was tasty but a little too thick for my taste.

This salad was super refreshing and light, but definitely satisfying!! Which is what I look for in a salad. I did cut the amount of poppy seeds in half, other than that…this is by far one of my favorite salads ever.

This is one of the best salads! I followed the recipe the only thing different I did was I added goat cheese (I love cheese on just about everything).

Yumm!! This is so good. Can’t stop eating it. Feta is a must addition to this delicious salad!

Loved this! I made this 3 times to serve for guests, once with veggienaise(the grape seed one) and once with Dukes, and once with another brand of mayo that I can’t remember. Veggienaise was best. Dukes was significantly better than the other standard mayo. All 3 times it was completely eaten so can’t go wrong really.

added grapes and nuts – only had macadamias but walnuts or pecans would be good too.

As others have said, you’ll need to cut the dressing ingredients in half or you will half a sloppy goop. Served it once and it was requested for a birthday dinner the next night. This is an easy and fun tasting salad. The poppy seeds put it over the top.

Such a simple dressing really is extraordinary! I will be making more of this luscious dressing! I did add a little extra vinegar for tartness. I just used a mixed green salad and added the red onion, strawberries and blueberries. I think this will make a wonderful dinner salad with some sliced grilled chicken on top.

It’s 100 degrees today so this was an excellent choice. I substituted Splenda for the sugar. Still marvelous and so easy to prepare quickly.

BEST. SUMMER. SALAD. E-V-A-H. Wow. I did add feta but the dressing was SO good that it didn’t need any modifications. And, we’re not even salad people. Wow.

Had strawberries that needed to be eaten. Followed the recipe as written. Delicious! Husband loved it too. My sister allergic to strawberries so put tangerine slices in hers and was equally good.

My dressing didn’t “drizzle” so I added several tablespoons of coconut milk. Not only did it help with the consistency of the dressing, I preferred the hint of flavor it added. You may also want to reduce the sugar in the dressing.

I have made this similiar salad only I used white onion instead of red, with dried cranberries, almonds and sprinkled in some feta cheese then toss it with the poppy seed dressing. My family couldn’t stop raving!!

I made a small batch of this for the two of us. I did bump up the white vinegar just a bit and didn’t use all the sugar or all the poppy seeds. I used hearts of romaine mixed with red leaf lettuce and green onion, because I didn’t have red. I just drizzled my dressing over the salads, instead of tossing – I didn’t want it to weight down my greens. And I added the feta as others suggested. Very good!

Loved this salad!!!

This recipe is awesome. I have made it with raspberry vinegar also and it is great either way.

This salad was great….the dressing was out of sight….I did as others did, used a little sour cream and a little Rasp. Vingerette….mmmmmmmm, good!
