Strawberry-Feta Chicken Salad with Roasted Strawberry-Balsamic Dressing

A deliciously simple summer salad with a zesty and sweet dressing. The grilled strawberries will win you over!

Ingredients

  1. 1 cup chopped romaine lettuce
  2. 1 cup fresh spinach
  3. 1 cup chopped kale
  4. 1 cup fresh strawberries, hulled and sliced
  5. 1 cooked chicken breast, sliced
  6. ½ cup sliced almonds
  7. ¼ cup crumbled feta cheese
  8. 1 cup fresh strawberries, hulled and quartered
  9. 1 tablespoon white sugar
  10. ¼ cup balsamic vinegar
  11. ¼ cup olive oil
  12. 1 tablespoon honey
  13. 1 tablespoon Dijon mustard
  14. 1 clove garlic, minced
  15. salt and ground black pepper to taste

Instructions

  1. Toss romaine, spinach, and kale together in a medium mixing bowl. Distribute sliced strawberries evenly on top of the greens. Arrange chicken over salad. Garnish with almond slices and feta cheese.
  2. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  3. Arrange quartered strawberries on the prepared baking sheet. Sprinkle with sugar.
  4. Roast in the preheated oven until softened and golden, about 20 minutes. Let cool 10 minutes.
  5. Combine roasted strawberries with their juice, balsamic vinegar, olive oil, honey, mustard, garlic, salt, and pepper in a food processor; process dressing until smooth. Drizzle dressing over salad and serve.
  6. You can use any 3 types of lettuce that you’d like.
  7. You can use whole-grain mustard instead of Dijon, if desired.

i didn’t use Feta cheese i used grated parm. i also added blueberries to it. i added pine nuts to my husbands, this is our go to salad this summer. awesome.

This was a delicious & healthy salad! I loved how simple it was but still satisfying. My husband was impressed by the meal but especially the dressing. Definitely make your dressing first so the flavors have a chance to meld together. There are 2 things I may add or change next time I make the salad. Firstly, add a bit more chicken. Then either add candied pecans or swap the almonds out completely just because they’re not my favorite. Thanks for a yummy recipe!
