Despite not being very sweet, this dish is creamy. I substitute half-and-half for the recipe’s specified cream. The pumpkin puree contributes much to the smoothness. This goes well with coffee, but tastes even better with a fine port. Whipping cream should be added before serving.

Ingredients
- 1 fresh peach, chopped
- 2 plums, pitted and chopped
- 1 cup chopped tomato
- 1 cup pitted and halved cherries
- 2 tablespoons chopped fresh parsley
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 1 tablespoon extra-virgin olive oil
Instructions
- Stir together peach, plums, tomato, cherries, parsley, lemon zest, lemon juice, minced garlic, salt, and black pepper in a large bowl until combined. Let stand at least 5 minutes to allow flavors to blend. Drizzle with olive oil and stir to combine.
