In the Spring, strawberries and spinach are delectable. When combined with other seasonal fruits, real bacon, and hard-boiled eggs, they produce a fantastic salad. The finishing touch is a sweet, tart oil and vinegar dressing!

Ingredients

  1. 2 eggs
  2. 4 slices bacon
  3. 5 cups fresh spinach, rinsed and torn into bite-size pieces
  4. ½ cup sliced fresh mushrooms
  5. 1 cup sliced fresh strawberries
  6. ½ cup thinly sliced onion
  7. 1 kiwi, sliced
  8. ½ mandarin orange, peeled and segmented
  9. ¼ cup ketchup
  10. ¼ cup water
  11. ¼ cup olive oil
  12. ¼ cup brown sugar
  13. 2 tablespoons cider vinegar
  14. ½ teaspoon spicy brown mustard
  15. 1 dash garlic powder
  16. salt and pepper to taste
  17. 1 cup seasoned croutons

Instructions

  1. Place the eggs in a saucepan with enough cold water to cover. Bring to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 12 to 15 minutes. Remove from hot water and cool. Peel, chop, and set aside.
  2. Cook the bacon in a skillet over medium high heat until crisp and evenly brown. Drain, crumble and set aside.
  3. In a large bowl, toss together the eggs, bacon, spinach, mushrooms, strawberries, onion, kiwi, and orange.
  4. In a separate bowl, mix the ketchup, water, olive oil, brown sugar, cider vinegar, and brown mustard. Season with garlic powder, salt, and pepper. Pour over the salad mixture, and top the salad with croutons.

Did not have the mustard so substituted a flavoured mustard that was in the fridge. Other than that follows recipe. VERY NICE.

After reading through the recipe and the reviews, I was expecting to love this salad. However, the reaction from myself and two guests was “meh.” We all agreed that we liked each individual ingredient, but they didn’t seem to meld together very well. And leftovers were enjoyed more with bottled ranch dressing than with the homemade dressing. I’m rating this a 3, but it was actually more of a 2 1/2. I won’t be making this again.

Instead of the mushrooms, kiwi and mandarin oranges, I added fresh pineapple. Also used dijon mustard instead of brown, and slightly increased the dressing ingredients in proportion to the olive oil as it seemed too ‘oily’. I will definitely keep playing with this recipe!

I love making my own salad dressing and this is one of my favorites. People ask me for the recipe whenever I make it. I omit the kiwi and orange and usually, add corn. I only use maybe a quarter of the dressing on the salad. I don’t like salad swimming in dressing, but I save the rest and use on other salads or give it away to a guest so they can enjoy it. This is really a nice sweet and tangy dressing that works well with a lot of different salads.

This salad was delicious. The dressing was sweet and tangy and very easy to make. The only change I made was that I substituted a small sunkist orange for the mandarin orange. Add dressing to taste.
