Simple cauliflower salad with a homemade vinegar dressing is the ideal side dish for a barbecue, picnic, or party in the summer. My love of giardiniera served as my source of inspiration. If you prefer a version without any heat, feel free to leave out the red pepper flakes.

Reviews
This was a tasty salad. I enjoyed the addition of green olives. It gave it a nice flavor. Unfortunately all the dressing was completely absorbed and didn’t have a good zing to it. I’ll make it again and maybe add a bit more dressing and slightly par-boil the cauliflower.
This was really good. I was making it for the whole family so I only used about half of the crushed red pepper. I’ll make it again!
