Southwestern-Style Corn Salad

Ingredients

  1. 2 (16 ounce) packages frozen corn, thawed
  2. 1 cup chopped green onions
  3. ⅔ cup chopped red bell pepper
  4. ¼ cup chopped fresh cilantro
  5. ½ cup olive oil
  6. ¼ cup red wine vinegar
  7. 2 tablespoons Dijon mustard
  8. 1 tablespoon honey
  9. 1 teaspoon minced garlic
  10. ½ teaspoon ground cumin
  11. ½ teaspoon dried thyme

Instructions

  1. Combine corn, green onions, bell pepper, and cilantro in a large bowl.
  2. Whisk olive oil, vinegar, Dijon mustard, honey, garlic, cumin, and thyme together in a small bowl until well combined. Add dressing to the corn mixture and toss to coat. Refrigerate for 2 hours before serving.
  3. The dressing itself can be doubled in order to give your corn mix an extra zing.
