Ingredients

  1. 1 large head romaine lettuce, chopped
  2. 1 large head bok choy, chopped
  3. ½ cup sliced almonds
  4. ½ cup sunflower seed kernels
  5. 2 (3 ounce) packages ramen noodles, crumbled (flavoring packets reserved for other use)
  6. 2 (15 ounce) cans mandarin oranges, drained
  7. 2 tablespoons butter
  8. ½ cup olive oil
  9. ¼ cup white sugar
  10. ¼ cup vinegar
  11. 1 tablespoon soy sauce

Instructions

  1. Mix romaine lettuce and bok choy in a large bowl; add almonds and sunflower seed kernels. Sprinkle crumbled ramen noodles over the lettuce mixture; add Mandarin oranges and toss.
  2. Melt butter in small skillet over medium heat; cook until browned, 2 to 3 minutes. Remove from heat.
  3. Beat olive oil, vinegar, sugar, and soy sauce together to dissolve the sugar until the mixture is smooth; whisk browned butter into the mixture.
  4. Drizzle dressing over the salad and toss to coat.
  5. The nutrition in this recipe reflects the use of the flavoring packets from the ramen noodle packages, which are not actually used. The actual nutritional content will vary.

Made it as is except:::no mandarin oranges. I used pomegranate seeds instead. Still great!

recipe didnt specify what type of vinegar. I used apple cider vinegar. didnt like it with acv. may be a good base to start with.

Made as written except that I only used half of the ramen noodles the recipe called for due to personal preference. There was already a lot of crunch going on and I didn’t seen the need to add the extra calories. This was great! I’m not a huge fan of fruit in my salad but I loved it in this recipe. The browned butter really brought all of the flavors together. This one is a keeper!
