Ingredients

  1. 1 (16 ounce) package rotelle pasta
  2. 1 cup broccoli florets
  3. 1 cup chopped carrots
  4. 1 cup chopped tomatoes
  5. ¾ cup grated Parmesan cheese
  6. 1 (6 ounce) can black olives, drained
  7. 1 (6 ounce) package pepperoni
  8. 1 cup Italian-style salad dressing (such as Olive Garden®), divided

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook rotelle in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 12 minutes. Drain.
  2. Stir rotelle, broccoli, carrots, tomatoes, Parmesan cheese, olives, and pepperoni together in a large bowl. Pour 1/2 of the dressing over the salad and toss to coat. Cover the bowl with plastic wrap and refrigerate, 8 hours to overnight. Pour remaining dressing over the salad and stir.

This turned out well, but as other reviewers have stated, it does make a lot. I used mini pepperoni, grape tomatoes, and subbed mozzarella for the Parmesan cheese.

Made it as written, except that I used heart shaped pasta for Valentine’s Day. We enjoyed this – but it does make a lot. Would be great for a pot luck get together. I took a bowl to my friend to share, as it was a bit much for just the four of us.
