Shrimp Pomelo Salad

a delicious spin on spaghetti squash. This can be served as a main dish for four people with crusty bread or as a side dish for your favorite meat entrée. Also, leftovers reheat quite well.

Ingredients

  1. 3 tablespoons soy sauce
  2. 1 lime, juiced
  3. 2 teaspoons honey
  4. 2 teaspoons sesame oil
  5. 2 teaspoons rice vinegar
  6. 1 pomelo
  7. 1 head romaine lettuce, chopped
  8. ½ pound cooked shrimp
  9. 2 tablespoons chopped peanuts, or more to taste
  10. 2 tablespoons chopped green onion, or to taste

Instructions

  1. Combine soy sauce, lime juice, honey, sesame oil, and rice vinegar in a bowl to make the dressing; stir until well combined.
  2. Cut off top of the pomelo; score peel using a sharp knife, going about 1/2-inch deep into the peel. Pry peel and pith off the pomelo. Pull apart into 2 halves. Separate segments, peel off membrane, and remove seeds. Break the segments into bite-size pieces.
  3. Toss pomelo with romaine lettuce in a bowl. Top with shrimp; garnish with peanuts and green onion. Drizzle dressing over salad; toss before serving.
  4. You can add dried chile flakes for extra flavor.
  5. You can add crispy fried shallots for a crunchy texture. In a small saucepan, heat 2 tablespoons light olive oil over medium heat. Add thinly sliced shallots and fry until golden and crispy. Transfer to a paper towel to soak up the oil and cool.

this is very good and refreshing. If you like Poke, you will probably really like this. I think it could use just a dash of some kind of spice… wish I knew what it was, but something just to kick it up a notch. Maybe paprika or cayenne? I’ll try it next time and see what’s up.

The amount of soy sauce in the dressing was overpowering. (I did use light soy) Perhaps 1-2 tablespoons would be more appropriate? Having said that, I came back to the salad leftovers the next day and found the juices from the pomelo and romaine had mellowed the flavour to the point where it was quite tasty.
