For a snack during a game, try this green tomato salsa over cream cheese with tortilla chips or crackers. When there is an early frost, this is a fantastic way to preserve those green tomatoes. With the help of my daughter-in-law Carolyn and her niece Felicia, I developed this recipe. Thank you, both!

Ingredients

  1. 1 ½ (8 ounce) packages tri-color pasta
  2. 3 stalks celery
  3. 1 pound imitation crabmeat
  4. 1 cup frozen green peas
  5. 1 cup mayonnaise
  6. 1 ½ tablespoons white sugar
  7. 2 tablespoons white vinegar
  8. 3 tablespoons milk
  9. 1 teaspoon salt
  10. ¼ teaspoon ground black pepper

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; rinse under cold water until cool and drain.
  2. While pasta is cooking, chop celery and crabmeat. Run hot water over peas to defrost.
  3. In a large bowl, whisk together the mayonnaise, sugar, vinegar, milk, salt and pepper. Add the pasta, celery and crabmeat and stir until evenly coated. Adjust the salt, sugar or mayonnaise to suit your taste. Chill several hours before serving.

I used half mayo and half kraft ranch dressing. Added the normal stuff like everyone else turned put great and cheaper than deli.

Good, but I like mine better. For the dressing I use Miracle Whip, a tsp. Of dried mustard, two packets of artificial sweetener, and (secret ingredient) Ingles Laura Lynne brand poppy seed salad dressing. I also add shrimp (cooked in Old Bay) and seared sea scallops (halved or quartered) along with cucumber and grape tomatoes. It’s been years since I’ve been allowed to bring anything else to group get-togethers! People love this!

Loved it! Made it many times with rotini and have added some stuff along the way. 1/2 Red pepper chopped 1/2 lemon squeezed More Mayo 2 tablespoons dijon mustard 5 chopped up little cornichons More salt & Pepper Always a huge hit!!

if you add a few green onions, a teaspoon of paprika, and a squeeze of lemon juice it is 5 stars! otherwise it is a little bland, but turned out delicious when i added just those few things

I was craving deli-style mock crab salad and this came super close! I used double the Hellman’s and sugar without increasing the vinegar. I added in shredded cheese, celery, shredded carrots, peas, green onion tops, and a pinch of curry. I cooked the noodles al dente and refrigerated a few hours. Delicious! For cracker spread, just eliminate the noodles. Will definitely make again! It made a lot for a fraction of the deli price.

For those who found it dry and a bit flavorless, it is. You may have the tendency to overdo the mayo, don’t. The secret is to add your favorite salad dressing, and skip the vinegar (yuck). If you’re smart, skip the salt, too. Italian dressing is ok, but add to taste and experiment with it to get your version right. Unless you’re going to clean your car battery with a food, skip the salt & vinegar. (Some exceptions.)

Loved it! I had to make a few changes due to self-isolation. I halved the recipe as I only had a half pound of imitation crab and I used Farfalle instead of tri-color pasta. Next time I will save half of the dressing, as others have suggested, and dress this before serving. Thanks for sharing, it’s a keeper!

Loved this! It was a major hit at my sister’s graduation party. I added more milk to the dressing and used white vinegar, not apple cider like others have stated. ACV gives it a weird sweet taste. But I also used real crab meat over imitation and added Old Bay Seasoning.

So as most already stated following the exact ingredient lists Will make a dry salad so I added as I felt was needed to taste I also added shrimp. Yes I would make it again

Liked this dish a lot, but made a few changes. I omitted the sugar and used spinach tortellini pasta. Chilled overnight and the next day had the dish with some crackers.

So good but of course I tweaked it for my family. Added chopped broccoli, green onion, bell pepper, extra celery and to combat the slight dryness about a half cup of ranch dressing along with recipe dressing.
