Savory Cucumber Salad

After experimenting with numerous mayo-based recipes—which I don’t like—I came up with this sour cream-based one. This dish has great flavor!

Ingredients

  1. 3 large cucumbers, sliced
  2. ⅛ teaspoon salt, or as needed
  3. 1 ¼ cups sour cream
  4. ¾ bunch green onions (white and pale green parts only), chopped
  5. ¼ cup white sugar
  6. 2 tablespoons apple cider vinegar
  7. 2 cloves garlic, or more to taste, minced
  8. ¼ teaspoon dried dill weed
  9. ⅛ teaspoon paprika
  10. ⅛ teaspoon salt
  11. ⅛ teaspoon ground black pepper

Instructions

  1. Spread a paper towel over a large platter. Arrange cucumber slices in a single layer atop the paper towel. Sprinkle 1/8 teaspoon salt over the cucumber slices; refrigerate at least 2 hours and up to 6 hours.
  2. Mix sour cream, green onions, white sugar, apple cider vinegar, garlic, dill, paprika, 1/8 teaspoon salt, and black pepper together in a bowl; refrigerate at least 1 hour and up to 4 hours.
  3. Pour sour cream sauce over the cucumbers and stir gently to coat.
  4. I sometimes like to add more garlic, as I love garlic.
  5. I also sometimes add 2 to 3 chopped fresh chives for added flavor.
  6. Depending on the size of your platter, you can stack layers of paper towel and cucumber slices atop one another.
  7. This can be served immediately, but tastes bests after standing in refrigerator for 1 to 3 hours after mixing.

I was hoping for a dressing that was similar to tzaziki. I only added 1 1/2 T sugar and still felt it was too sweet. I would not make this again.

This was good! I did feel like it was a bit too sweet, so I would cut back on the sugar next time. Hubby and the girls seemed to like it, but the little guy did not. Thanks for sharing. 🙂
