Simple and colorful describes the chicken in coconut milk sauce. It tastes fantastic when served over spaghetti or rice and will fill your home with the alluring scents of South American cooking.

Ingredients

  1. 4 large ripe tomatoes, cut into bite-size pieces
  2. 1 bunch cilantro, stems cut off and leaves coarsely chopped
  3. 1 large green bell pepper, cut into bite-size pieces
  4. 1 large red bell pepper, cut into bite-size pieces
  5. 2 jalapeno peppers, finely chopped
  6. 3 green onions, chopped
  7. ½ sweet red onion, chopped
  8. 2 large avocados, pitted and cut into bite-sized pieces
  9. 1 lime, juiced
  10. ½ teaspoon salt, or to taste

Instructions

  1. In a large salad bowl, lightly mix the tomatoes, cilantro, green and red bell peppers, jalapeno peppers, green onions, and sweet red onion until thoroughly combined. Gently toss with avocado pieces, and squeeze lime juice over the salad. Sprinkle with salt to serve.
  2. Cook’s Note
  3. I control heat of the jalapeno peppers by leaving in membranes and seeds (hotter) or removing the seeds and membranes (milder). I usually end up removing the seeds from 1 pepper and leaving the seeds in the other one.

Great overall, but I’d definitely recommend scaling back the cilantro (I wound up using way less than the recipe called for and added basil because I had a bunch on hand). I love the flavor overall. I added more pepper and some cayenne pepper to spice it up. This recipe makes a lot of salad.

Funny that this recipe is rated 5 stars but the only two reviewers haven’t even tried it yet! I know I don’t like cilantro but this recipe sounds so good that I thought perhaps this time I might, so I gave it a try. I was wrong. The cilantro ruined it for me. However, my friend who does like cilantro thought the salad was great. I don’t like to rate a receipe that I didn’t make as stated (I left out the red onion and Jalapenos only becasue I didn’t have them on hand, and scaled the recipe back to about half) but in this case it seemed appropriate. My friend really liked it and I think I would too if maybe I used a smaller bit of parsley instead of the large amount of cilantro the recipe calls for. The lime juice as a dressing is really nice, but be careful with the salt.
