Roasted Cauliflower with Kale Chips and Citrus

One of the best recipes ever is this one. It’s moist and sweet—like a cake and a pie together! If desired, add extra pecans. Add ice cream on top.

Ingredients

  1. 1 bunch kale, stemmed and torn into pieces
  2. 3 tablespoons olive oil, divided, or to taste
  3. 3 tablespoons grated Parmesan cheese
  4. 1 tablespoon ground red chile pepper
  5. 1 teaspoon ground oregano
  6. salt to taste
  7. 2 tablespoons butter
  8. ¼ cup bread crumbs
  9. 1 head cauliflower
  10. 1 teaspoon chipotle spice rub, or to taste
  11. 1 orange, peeled and cubed
  12. 2 tablespoons red wine vinegar

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Spread kale on the baking sheet. Drizzle 1 tablespoon olive oil on top. Coat with Parmesan cheese, red chile pepper, oregano, and salt.
  3. Bake in the preheated oven until crisp, 15 to 20 minutes. Transfer to a plate.
  4. Heat butter in a small skillet until melted and starting to brown, about 5 minutes. Stir in bread crumbs. Remove from heat.
  5. Slice cauliflower into 1/2-inch “steaks”. Rub 1 tablespoon olive oil and chipotle spice rub on top.
  6. Heat a large skillet over medium heat. Add cauliflower; cook and stir until browned, about 2 minutes per side. Transfer to the baking sheet.
  7. Bake in the preheated oven until just tender, about 15 minutes.
  8. Place cauliflower steaks on a large serving platter; top with crisp kale and orange.
  9. Whisk remaining 1 tablespoon olive oil and vinegar together in a small bowl. Drizzle over orange. Sprinkle bread crumbs on top.
  10. Add minced shallots and olives with the orange if you like.

Loved this recipe. Did not use the Red wine vinegar though. Will be making it again for sure.

This turned out good and I loved the addition of kale chips. As a matter of fact, I munched on the leftover kale and loved it so much that I plan to play around with different flavors and make just the chips again soon. I did not feel the orange added anything to the dish but that is just my opinion.
