This straightforward raw zucchini salad with dill, spring onions, and a straightforward vinegar dressing without oil tastes best when made with small, fresh zucchini from your own. For optimum results, the salad has to marinade for the entire night.

Ingredients

  1. 3 tablespoons white wine vinegar
  2. 3 tablespoons white sugar
  3. 1 teaspoon salt
  4. freshly ground pepper to taste
  5. ½ bunch fresh dill, chopped
  6. 4 cups cubed zucchini
  7. 2 green onions, trimmed and finely sliced

Instructions

  1. Combine vinegar, sugar, salt, and pepper in a large bowl; stir in dill. Add zucchini and green onions and mix well. Cover and refrigerate for 24 hours. Mix before serving.
