Raw Kale Salad with Feta, Apples, and Pecans

This main dish is simple and tasty! It’s a favorite of my husband’s. To make rolling the chicken breasts easier, try to use the largest chicken breasts you can locate.

Ingredients

  1. ½ tablespoon olive oil
  2. ½ cup pecan halves
  3. 1 packet stevia powder
  4. ¼ teaspoon chipotle powder
  5. 2 bunches kale, stemmed and coarsely chopped
  6. 1 tablespoon olive oil
  7. ½ teaspoon salt
  8. 1 apple, diced
  9. ½ cup crumbled feta cheese

Instructions

  1. Heat olive oil in a cast iron skillet over medium-high heat. Add pecans; cook and stir until fragrant, about 5 minutes. Transfer to a small bowl and sprinkle with stevia and chipotle powder; toss until well coated.
  2. Place kale in a large bowl. Drizzle with olive oil and sprinkle with salt. Massage until leaves begin to soften, about 2 minutes. Add diced apple and spiced pecans. Fold in feta cheese.

  4. You can use pears instead of apples and vary the type of nut for a little variation. Another great option is using dried cherries or cranberries for a little added tang.
