Quinoa with Feta, Walnuts, and Dried Cranberries

Roast chicken with delicious white meat and fall-off-the-bone dark meat served with onion-roasted croutons, sometimes known as “nuggets of flavor,” which soak up the roast’s drippings. The meal will have a terrific texture and flavor if all of the onion and bread chunks are removed because they are bursting with flavor. As desired, serve with salad or greens.

Ingredients

  1. 2 cups low-sodium chicken broth
  2. 1 cup quinoa
  3. ½ cup chopped walnuts
  4. ½ cup dried cranberries
  5. ⅓ cup crumbled feta cheese

Instructions

  1. Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to low, cover, and simmer until quinoa is tender and broth has been absorbed, 15 to 20 minutes. Transfer quinoa to a bowl.
  2. Stir walnuts and cranberries through the quinoa; add feta cheese and gently stir.
  3. You can use water to boil the quinoa if you’d prefer.
  4. Pecans or almonds are fine in place of the walnuts.

Utilizing what was in the pantry (pumpkin seeds and dried cherries) we followed the recipe. Minus the feta we used it to stuff/bake acorn squash. Leftovers as a salad WITH feta. Absolute hit. Into the repertoire!

I dried roasted the walnuts in a cast iron skillet and used shredded three cheese, (parmesan, Romano, and asiago) in place of the feta. delish!

Added dried chopped onion, garlic powder and basil to the quinoa as cooking. Mixed all ingredients, 1tbsp of the feta brine and chopped scallion. YUMMY!

This makes a great addition to my lunch box. 1/2 cup is 245 calories. I think I’ll try it with apple next week instead of cranberry just to mix things up.

This was my first attempt so I didn’t change anything. The feta threw me off a bit but it tastes pretty good. I like walnuts and dried cranberries which definitely gives it a nutty and sweet flavor. I would make it again.
