The air fryer turns green plantains into crispy, crunchy chips that resemble potato chips without the added oil and calories. Depending on what you’re craving, you can make these sweet or salty by using cinnamon-sugar or salt for the chips.

Ingredients

  1. 2 cups thinly sliced and peeled cucumber
  2. salt to taste
  3. ¼ cup white balsamic vinegar
  4. 2 tablespoons olive oil (Optional)
  5. 1 teaspoon white sugar
  6. ½ teaspoon dried dill weed
  7. 2 tomatoes, chopped, or more to taste

Instructions

  1. Spread cucumber slices in a thin layer on a large platter. Sprinkle salt generously over the cucumber. Let salt soak into cucumber slices for about 30 minutes.
  2. Transfer cucumber to a colander and rinse with cold water; drain thoroughly and transfer to a dry surface. Pat cucumbers dry with paper towel.
  3. Whisk vinegar, olive oil, sugar, and dill together in a large bowl. Add cucumber slices and tomatoes; toss to coat.
  4. You may skip the step of salting the cucumber if in a hurry, but it does take the bitterness out of cucumbers.
  5. Use 1 cup grape tomatoes in place of the chopped tomato if you wish.

We have been keeping a fresh batch in the fridge…..replacing as the previous runs out! It does not last long around here! I did change the vinegar to apple cider vinegar & we add onions or chives or both. Also, used local honey instead of sugar & left out the salt.

Perfect side dish for a hot summer day. I skipped salting the cucumbers and doubled the dressing (personal preference), this recipe is spot on. Love it!

Spiral-cut the cucumbers and did not salt them, as we wanted to eat this right away. There are many dill-cuke recipes on this site, and although we enjoyed this, next time I would use less olive oil (just our taste preference). This one is a “dieter’s delight!”
