Ingredients

  1. 1 ½ (16 ounce) packages mixed baby salad greens
  2. 1 ½ cups pecans
  3. 8 ounces dried cherries
  4. ¼ pound Parmesan cheese, shaved
  5. ½ cup balsamic vinaigrette salad dressing, or to taste

Instructions

  1. Mix baby salad greens, pecans, dried cherries, and Parmesan cheese in a large bowl. Drizzle vinaigrette over the salad; toss to coat evenly.

Definitely don’t wait til Christmas to make this salad! It’s delicious, and would be great any time of the year! I used baby spinach for the greens, and a homemade balsamic. You can serve this salad alone as a light lunch, or pair it with a protein (I served it alongside some baked chicken thighs) for an easy supper too. Great recipe, thank you so much for sharing!

This was a hit on Christmas Eve I added A jar of pickled beats to it.Raspberry salad dressing and a shaved Parmesan cheese it was delicious everybody loved it

One of the best salads. Need to cut the salad ingredients in half if you are serving as a side dish. Do not skimp on the salad dressing. I substituted with raspberry vinaigrette and craisins as another reviewer suggested. Many compliments – I am from the Northwest.

Excellent! Don’t feel guilty for making something so easy. This is a world class salad and a great show at the dinner table. We made it for Thanksgiving. I used Gerard’s Champagne dressing. It was light and perfectly matched so all the flavors were shining. Dried cherries are expensive! In this case, I think they are important to the salad.

My family raved about this salad. I made the dressing a day ahead so all the ingredients could “marinate” overnight. I was rushed so skipped using the food processor. I used one shallot instead of the onion and used my garlic press instead of chopping the shallot, dried cranberries instead of cherries and just thoroughly whisked all the ingredients together.
