Poppy Seed Summer Salad

a cucumber and melon salad that is incredibly simple and delightful. a wonderful departure from conventional fruit or green salads! made a whole day in advance.

Ingredients

  1. ½ cantaloupe – peeled, seeded, and cut into 1/2-inch cubes
  2. 2 cucumbers – peeled, seeded, and cut into 1/2-inch cubes
  3. ½ small red onion, finely diced
  4. 1 large stalk celery, diced
  5. ⅓ cup poppy seed dressing, or more to taste
  6. 3 tablespoons red wine vinegar
  7. 1 teaspoon poppy seeds, or to taste (Optional)

Instructions

  1. Place cantaloupe and cucumbers in a colander; set a plate on top. Place a heavy object such as a large can of food on top of plate to squeeze out excess liquid from cantaloupe and cucumbers, tossing about every 30 minutes, 2 to 3 hours.
  2. Transfer cantaloupe and cucumbers to a large bowl; add onion, celery, poppy seed dressing, and red wine vinegar. Toss to coat. Stir in poppy seeds.

I bought an overripe melon from the farmers market… and so glad I found this recipe! Husband doesn’t care for celery so I omitted it.

This was good as written, but I’ll be adding a few more “colors” (e.g., berries) and sprinkling a little non-caloric sweetener over them the next time I make it.

4.26.16 If you’re planning to make this in advance, I can certainly see why you’d want to get the excess moisture out and go through the procedure outlined in the instructions. I had this for lunch today, cut it up, added the poppy seed dressing, and I had no problem with watery dressing. Nice little salad, certainly like the way this one breaks nutritionally. Thanks for sharing.
