Perfect Summer Fruit Salad

In search of a technique to prepare squash that my children would enjoy, I developed this recipe for roasted zucchini. This one is well-liked.

Ingredients

  1. ⅔ cup fresh orange juice
  2. ⅓ cup fresh lemon juice
  3. ⅓ cup packed brown sugar
  4. ½ teaspoon grated orange zest
  5. ½ teaspoon grated lemon zest
  6. 1 teaspoon vanilla extract
  7. 2 cups cubed fresh pineapple
  8. 2 cups strawberries, hulled and sliced
  9. 3 kiwi fruit, peeled and sliced
  10. 3 bananas, sliced
  11. 2 oranges, peeled and sectioned
  12. 1 cup seedless grapes
  13. 2 cups blueberries

Instructions

  1. For the sauce: Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low and simmer until slightly thickened, about 5 minutes. Remove from heat and stir in vanilla extract. Set aside to cool.
  2. For the salad: Layer fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour cooled sauce over fruit; cover and refrigerate for 3 to 4 hours before serving.

I used 4 kiwi, 4 bananas, 1 pound of strawberries, not so many grapes (the bowl was almost full), and 11 ounces blueberries. I increased orange juice to1 cup, 1/8 cup more lemon juice, but kept the vanilla to 1teaspoon. Next time I will will mix up the fruit instead of layering. Good recipe

Fruit salad was great! The only problem is now that All recipes has removed their app. the website doesn’t list how many servings. This makes it very difficult to customize and don’t know how much you’re making.

I’ve made this many times, exactly as written. Delicious, and loved by all! I made a version for a work luncheon, replacing the grapes with diced apples, as a co-worker hates grapes. I think I like that even better. Also, the left-over dressing at the bottom of the bowl is GREAT with vodka. Just sayin’.

I made this salad for Easter Brunch and it was a BIG HIT! I made enough for 12 people, and there were only 6 of us, and we ate almost all of it. I was hoping for some extra left overs but there weren’t much. I was short on time so put the sturdier fruits in the night before, and added the more tender ones the next morning. It made an impressive sight, and I got many compliments on how pretty is was. The dressing was light and enhanced it, and for me that was a surprise, as we usually eat our fruits without any added sugars. But this was so light and tasty that it enhanced and did not overwhelm. I will make this again for picnics this summer since it was so good!

Liked this fruit salad very much. The sauce blended all the fruit nicely yet you still tasted each fruit. I started layering the fruits but when I added the sauce I mixed it all up. Not sure why you need to wait 2-3 hours before serving. The bananas did get a little mushy after a couple hours out on the counter. Still had great flavor. The sauce never did thicken though I cooked it for 10+ minutes, but still tasted good. I liked the way all the fruits tasted like they belonged.

We prepared this fruit salad for a small party that we held this week. It was a huge hit and better than even we thought that it would be. Definitely worth the 5*. I tried to stick very much to the recipe for this time, with the only exception being that I added 5 kiwi fruits since that was what the container I purchased held and I didn’t want to waste the other 2. I actually thought that the 5 fruits was a perfect quantity and, after looking at it, that 3 might be a little light, to be honest. I wouldn’t change a thing, to be honest, and plan on making this again when future activities call for it. The only negative was that the blueberries that I purchased were a little more sour than I would have liked but that is no fault of the salad. Overall, two thumbs up from ourselves and everyone that we served it to.
