Ingredients

  1. 3 pounds unpeeled red potatoes
  2. 4 eggs
  3. 1 ½ cups mayonnaise
  4. 2 tablespoons milk
  5. 2 tablespoons distilled white vinegar
  6. ½ cup sliced green onions
  7. ½ teaspoon salt
  8. ¼ teaspoon ground black pepper
  9. 1 cup sliced celery

Instructions

  1. Bring a large pot of salted water to a boil. Add red potatoes, and cook until tender but still firm, about 15 minutes. Drain, cool and chop into 1 inch cubes. Place in a medium bowl.
  2. Place eggs in a medium saucepan, and cover with cold water. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and dice.
  3. In a small bowl, whisk together mayonnaise, milk, distilled white vinegar, green onions, salt and pepper. Pour the mixture over the potatoes, and mix together with the eggs and celery. Cover, and chill in the refrigerator approximately 2 hours before serving.

Good basic recipe but I read reviews first and adjusted. Added a little plain yellow mustard (goes well with the egg), some cayenne pepper plus used cider vinegar instead of white. It’s still chilling but tasted good already.

I made this potato salad for the first time yesterday, following the recipe. My husband is very particular about potato salad, and he’s loving it.

Super tasty! Always a crowd pleaser. We like eggs so I add one more. I add a good squeeze of Dijon mustard, onion powder, garlic salt and dill along with more salt to the mixture. I don’t measure, just add to taste. I boil the potatoes longer at a lower temp to make certain they are cooked through.

I doubled the eggs and added finely chopped Dill Pickles (Farmans Kosher Big Boys) substituted a half cup of sour cream for that portion of the mayonnaise and added a teaspoon of Paprika to the mayo mixture. Sprinkled fresh parsley and a dusting of Paprika before serving.

I made a half size. I added in a tbl of Dijon mustard, 2-3 tbl of diced mama lil’s spicy sweet red peppers (I found them at Costco). I used two eggs and 1/4 cup of diced green onions with the salt and pepper. The best part was I added in about a 1/4 cup of fresh chopped dill weed. AMAZING!!!! It was so good I could not wait to have a small bowl of it before it cooled down. Should be even better once it has time to really blend.

Absolutely delicious! Served it to guests who said it was the best potato salad they had ever eaten. One suggestion—-add one tablespoon of sugar to offset the sourness of the vinegar. I also used the baby red potatoes and simply cut them in half. Perfect size and tenderness. !
