Mom’s Cucumber Salad

When I was a child, my mother used to make this recipe. It continues to be a favorite of mine. Some friends modify the dish by including some green onions. We just don’t like raw onions, me or my kids. Enjoy!

Ingredients

  1. 1 cup mayonnaise
  2. ¼ cup white sugar
  3. 4 teaspoons distilled white vinegar
  4. ½ teaspoon dried dill weed
  5. ½ teaspoon seasoned salt
  6. 4 medium cucumbers, peeled and sliced

Instructions

  1. In a large bowl, stir together the mayonnaise, sugar, vinegar, dill, and seasoned salt. Mix in the cucumber slices, tossing to coat.

I love that this recipe uses mayonnaise since I usually have that on hand. (My mom used to use sour cream. ) I also salted the sliced Cucumbers slightly then squeezed out the excess liquid – a tip from mom as I was learning to cook! I did only add a “pinch” of sugar to take away the tartness of the vinegar but not overly sweeten this wonderful dish!

This is the classic cucumber salad I remember my mother making when I was young. Since I was making it ahead, I salted the cucumber slices and let sit for 30 minutes. Then I made the sauce (without salt since it was on the cucumbers). I taste tested the sauce with one cucumber and decided to add an extra splash of white vinegar. You can easily adjust the sauce by adding more sugar for sweetness or more vinegar for tang. It came out perfect and even six hours later the cucumbers were still crunchy. Next time I may use fresh dill to up the flavor punch.

I love cucumber salad too! Try using 1/2 plain whole milk yogurt ans 1/2 Hellmans mayonaise , lots of green onion ( scallions) with lots of fresh or dry dill. Yummy and more balanced.

I never use mayo in my cucumber salad this is a different twist. I would add red onion sliced thin.

I make my Mom’s Recipe using “sour cream!” Also use equal parts of vinegar, sugar, dash of pepper & just a bit of lemon juice. Also add alitte of sliced/chopped onion. Mix all ingredients except cucumbers(3). Peel/ don’t peel cucumbers, soak in ice water about 1 hour. Drain. Add to mixture of sour cream, vinegar, sugar & lemon. Best if sits in fridge overnight to soak up flavors. Serve cold! Yummy. I don’t care for using mayonnaise. Have eaten it since a child. Delicious cold salad!

I use sour cream & a little Mayo..and always sweat the cucumbers on a tea towel 1st with salt… also cherry tomatoes are a great addition

As written using 1/4 cup of Sugar is an absolute no go. This is an unhealthy version of something that should be nutritious. There is no need for Sugar at all. Allow the flavor of the Cucumbers shine w out overpowering it w a ton of sweet (besides that it is THE enemy). Also, try to make your own Mayo. It’s extremely easy w only a few ingredients needed (no toxic EDTA or Calcium Chloride).

I use this same recipe for potato salad without the dill. I also add onion and celery. It is delicious. I will try this with cucumbers.

I liked it! a little sweet but I’ll add less sugar next time. Why bother adding your 2 cents worth here if you have completely changed the recipe? No one cares if you made it completely different!

Great recipe! I changed a few things due to dietary.. used milk instead of mayo, used Italian dressing instead of vinegar and omitted the sugar.
