This is the ideal omelet in Western culture! Even sausage and red bell peppers are acceptable additions.

Ingredients

  1. 1 pound small cucumbers, peeled and thinly sliced
  2. salt to taste
  3. 1 bunch dill, chopped
  4. 2 ½ tablespoons sour cream
  5. 1 teaspoon lemon juice
  6. 1 pinch white sugar, or to taste
  7. ground black pepper to taste

Instructions

  1. Place cucumbers into a colander and sprinkle generously with salt; let stand until soft, about 5 minutes. Squeeze liquid from cucumbers and transfer to a bowl with dill.
  2. Mix sour cream, lemon juice, and sugar together in a bowl; add to cucumbers and toss to coat. Season with pepper. Cover and chill for at least 30 minutes before serving.

This is the recipe my Polish family always made for every holiday and occasion. I love it! Pretty sure they used white vinegar instead of the lemon juice. Since the seedless cukes are available now, I use those and they are PERFECT for this recipe!

I like this recipe a lot ,I made this to the letter . However what did because I made 5 times the amount on the recipe . I made the dressing and salted the cucumber let it drain. here is how I kept it great. I keeped the cucumbers separte from the dressing . When I was going to eat it I put it together at least 1 hour before I had the dinner .It retained the flavor and the texture . That way I had enough for the week.

Really nice, refreshing salad that can be thrown together very quickly. It was good on its own but I added a splash of red wine vinegar because imo it needs a little extra tanginess. Will definitely make again though!

I have made this Pan-Slavic salad for 30 years. It is not just a Polish recipe but one that is common to many if not most Slavic cultures and countries. This recipe is just wrong. You need a heck of a lot more sour cream and you need white or salad vinegar. 2 and a half table spoons doesn’t even begin to cut it. Start with a cup and go for 2! The vinegar is essential. I use 2-4 tablespoons depending on the number and size of cukes.

You have everything you need here to make a good version of this dish, but you really have to tweak and taste to get it tasting right. Following the recipe initially, the dressing tastes of nothing but sour cream. It needs a lot more acid, and a tad more sugar, then it is really on point. Just a warning to folks who tend to follow a recipe exactly and then throw up their hands when it doesn’t taste how they want. Adjust.

7 18 17 … Somehow this managed to still taste rich with that little amount of reduced fat sour cream. Good trick! 😀 I added 1/4t dill for fresh; subbed red wine vinegar for the lemon & only 1/2t; maybe that’s how the richness is evident. ‘Liked didn’t love. If I have excess cucs, I may try again. 🙂 I’m also going to try Sassy’s
