A very simple and cool summertime addition to hot or grilled cuisine. Fruit can be cut into smaller pieces to be served as a salad or side dish or left whole to be used as a relish or condiment. A nice change of pace on the breakfast buffet, too!

Ingredients
- 4 cups cubed honeydew
- ½ lime, juiced
- ¼ cup chopped fresh mint leaves
- 3 tablespoons chopped fresh cilantro
- 1 pinch white sugar, or to taste
Instructions
- Gently combine honeydew, lime juice, mint, cilantro, and sugar together in a bowl. Refrigerate at least 2 hours before serving.
- Feel free to use Splenda(R) in place of sugar, if you prefer.

Very refreshing and tasty! The mint and cilantro adds a lot of flavor. I didn’t think the sugar was necessary, but my honeydew was very ripe. You will probably want to add a bit of sugar otherwise. Next time I will use a bit less of the mint and cilantro so it isn’t so prominent.
