Mexican Street Corn Salad

With the addition of tortilla chips, this Mexican street corn salad transforms the flavors of elote (real Mexican street corn) into a tasty side dish. It can also be served as an appetizer or snack. If preferred, add more cilantro and cotija cheese as a garnish.

Ingredients

  1. 2 tablespoons Country Crock Spread
  2. 6 cups fresh corn kernels
  3. ½ teaspoon salt
  4. 2 medium fresh jalapeno peppers, seeded and chopped
  5. 2 cloves garlic, chopped
  6. 1 teaspoon ground cumin
  7. ¼ cup mayonnaise
  8. ¼ cup chopped cilantro
  9. 2 tablespoons grated cotija cheese
  10. 2 tablespoons lime juice

Instructions

  1. Melt Country Crock in a large nonstick skillet over high heat. Working in batches if necessary to avoid overcrowding the skillet, add corn and salt. Cook and stir until slightly charred, about 5 minutes. Add jalapeños, garlic, and cumin; cook until fragrant, about 1 minute.
  2. Stir in mayonnaise, cilantro, cotija cheese, and lime juice. Serve warm or at room temperature.

I didn’t have a jalepeno so I used a red serano… very hot but I LOVED it.
