Several generations have passed down this traditional British recipe. To ensure that it is not forgotten, I would like to archive it here. Our family loves it, and I hope this delectable shortcake brings joy to a lot of other folks as well!

Ingredients

  1. ½ (16 ounce) package mezze (short) penne pasta
  2. 1 cup sliced and quartered cucumber
  3. 1 cup halved cherry tomatoes
  4. 2 tablespoons minced shallot
  5. 1 (2.6 ounce) pouch wild-caught pink salmon
  6. ¼ cup extra-virgin olive oil
  7. 1 tablespoon white wine vinegar
  8. 1 tablespoon freshly squeezed lemon juice
  9. 1 teaspoon lemon-pepper seasoning
  10. ½ teaspoon Dijon mustard
  11. ½ teaspoon salt
  12. ¼ teaspoon dried dill weed

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain, rinse in cold water, drain well, and place in a serving bowl.
  2. Top pasta with cucumber, tomatoes, and shallot. Break up salmon and sprinkle on top.
  3. Whisk olive oil, vinegar, lemon juice, lemon-pepper seasoning, mustard, salt, and dill in a small bowl for the vinaigrette. Drizzle over the salad and toss gently to combine.

Very good! I used a little bit less pasta and canned Alaska sockeye salmon. A family member doesn’t like tomatoes so I didn’t put any fresh ones but managed to hide some dried tomato bits. I will definitely add this recipe to my collection.

Delicious! I substituted the White wine vinegar with balsamic vinegar And added some scallions, broccoli, and black olives! This recipe is one of my new favorites!!!
