Martie’s Broccoli Salad with Bacon and Cheese

At family gatherings and church picnics, my mother-in-law Martie’s recipe for broccoli salad is a perennial favorite. It tastes sweet and salty since bacon, cheese, and raisins are added.

Ingredients

  1. 1 pound bacon
  2. 1 head broccoli, or more to taste
  3. 1 red onion, chopped
  4. 1 cup golden raisins
  5. 1 (8 ounce) package shredded sharp Cheddar cheese
  6. ¾ cup mayonnaise
  7. ¼ cup white sugar
  8. 1 tablespoon white vinegar

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Drain bacon slices on paper towels. Let cool enough to handle, about 5 minutes. Crumble into a small bowl.
  2. Cut broccoli into florets, dice up the stems, and put all into a large bowl. Mix in onion. Add raisins and Cheddar cheese. Stir in crumbled bacon.
  3. Combine mayonnaise, sugar, and vinegar in a small bowl. Pour over broccoli mixture. Mix until completely covered. Refrigerate for 1 hour before serving.
  4. You can use black Thompson raisins instead of golden.
  5. Substitute Miracle Whip(R) for mayonnaise if preferred.
  6. Dice Cheddar cheese instead of shredding, if preferred.

I’ve made this salad multiple times and my whole family loves it. It’s a go to all summer long! I use a little less sugar than is called for but other than that I follow the recipe as stated.

WAY too much sugar! I could tell just from the ingredient list that I’d cut the sugar in half, which I did, and it was still too much. In my opinion this would be so much better using mayo with the vinegar and perhaps some Dijon mustard. Ranch or blue cheese dressing might also be a good substitute, and leave the sugar out altogether.

Always loved this recipe as they served this at a nearby grocery store in the deli department. Glad to have recipe as my whole family enjoys it.

I really enjoyed this! A nice balance of flavors and textures throughout. The only thing I did different was to use less onion, raisins and cheese, personal preference. Would make a great BBQ or potluck dish.
